Meatloaf Cupcakes Recipe

1. Prepare 1 lb or more of your regular meatloaf (DO NOT COOK IT YET)
2. Just mix the hamburger with the ingredients you normally use to make your meatloaf.
3. Using foil cupcake wrapers, place them in a muffin/cupcake tin.
4. Fill each wrapper 3/4 of the way with the meatloaf mixture. (make sure you press it down to fill the wrappers.)
5. Bake at 350 degrees for approximately 15 minutes or until done in the center.
 
While the meat is cooking, make the mashed potatos (either real or immitation). Seperate the mashed potatos into 3 or 4 bowls and add food coloring (you can make as many colors as you like)
 
When the meatloaves are done (remove them from the pan, but leave the foil wrappers on them), spread the colored mashed potatos on top (you can use a frosting pipette (use a big tip), or just spread it on with a spoon). Sprinkle any vegetables you want on top (shredded carrots, corn, peas, green beans...etc) they look like the sprinkles on cupcakes!!
